How does Styrian pumpkin oil get its dark green color? Its red shimmer? Hulless seeds from the Styrian oil pumpkin (Cucurbita pepo var. styriaca) are soaked, skin and all, in saltwater, then slow-roasted. The green color comes from the skins of the seeds. And the red shimmer comes from the carotene in the seeds. Altogether, the color and flavor are glorious!

Origin
The Styrian oil pumpkin (lat. Cucurbita pepo var. styriaca) has skinless seeds and it is - like all pumpkins - a berry fruit. The soft seeds are particularly suitable for roasting and pressing. The valuable result is Pumpkin Seed Oil. Styria is a federal state in the south of Austria with a mild climate and ideal soil conditions for growing pumpkins.
The oil pumpkins are harvested in autumn with special machines and partly still by hand.

Production
Our pumpkin seeds are washed, dried and kept refrigerated after harvesting, so that fresh pressing is possible all year round. For the production of pumpkin seed oil the pumpkin seeds are ground, roasted and finally pressed under high pressure.

Taste
Our pumpkin seed oil has a dark green to dark brown colour with a reddish shimmer. The roasting of the ground pumpkin seeds brings out classic roasting aromas. The pumpkin seed oil produced by cold pressing tastes soft and nutty and is viscous.

Storage and shelf life
Pumpkin seed oil should always be stored in a cool and dark place - but not in the refrigerator, otherwise it will start to winterize and become so viscous that it won't run out of the bottle.
Due to the incoming oxygen, oxidation inside the bottle starts after opening and therefore tastes best at the beginning. Many prefer smaller bottles and cans of pumpkin seed oil because of the fresh taste. Once opened, pumpkin seed oil should be used within 8 months at the latest, otherwise it loses its taste.
