Ingredients

  • For 4 servings
  • 400 g cooked beef
  • 300 g cooked beets
  • 50 g lamb's lettuce, 1 carrot
  • 1 small piece of celery
  • 1 small parsnip, 2 tbsp Pumpkin Seeds
  • Mustard, white wine vinegar
  • Rapeseed oil, Pumpkin Seed Oil
  • 1 bunch chives
  • Some beef broth, sugar, horseradish
  • Salt, freshly ground pepper

Instructions

  • Slice the beets into thin slices. Bring some vinegar, salt, sugar, and pepper to a boil. Pour over the beets. Sprinkle with freshly grated horseradish and let marinate for at least an hour.
  • Cut the carrot, celery, and parsnip into tiny cubes and cook them until soft in lightly salted water.
  • Whisk together mustard, vinegar, rapeseed oil, a little beef broth, salt, and pepper to make a vinaigrette. Mix it with the root vegetables.
  • Slice the meat as thinly as possible. Drizzle the vegetable vinaigrette over the meat and let it marinate as well.
  • Coarsely chop the pumpkin seeds and roast them in a dry pan over moderate heat.
  • Arrange the beet and meat slices in a shingle pattern on four plates. Distribute the vegetables and lamb's lettuce on top. Drizzle with pumpkin seed oil. Sprinkle with pumpkin seeds and finely chopped chives.
