Pasta Salad with Pumpkin Seed Pesto

Ingredients

For 4 servings
500 g pasta
2 servings of pasta salad with pumpkin seed pesto
1 lemon (juice)
1 can of beans (white, small)
50 g breakfast bacon
Salt
PESTO
1 clove garlic
1/2 bunch parsley
100 g Pumpkin Seeds
3 tbsp Pumpkin Seed Oil
6 tbsp olive oil

Instructions

Cook the pasta in plenty of salted water according to the package instructions. Dice the pears and drizzle with lemon juice. Drain the beans and rinse them with water, then dice the bacon.
Use an immersion blender to blend the pesto ingredients until a thick pesto mixture forms. Sauté the bacon with the pears, then add the beans and pasta. Mix in the pumpkin seed pesto and serve.
