#1: The seeds are essential
Only oil from the sort Styrian Oil Pumpkin (Cucurbita pepo var. styriaca) is allowed to bear the certificate “100% pure Pumpkin Seed Oil”. This is a special pumpkin sort with skinless seeds. The combination with the Austrian micro climate brings out the delicious oil.
Imported, cheaper, skinned pumpkin seeds do neither make the kind of rich taste nor smell nor the same quality and viscosity.
For some years now also pumpkin seeds imported from Far East and Eastern Europe are available on the market. However, these cheaper seeds and seeds with shells are lacking of the particular something. The low quality of counterfeit Pumpkin Oils, however, can be seen immediately by gourmets because of the insipid smell and flat taste.
#2: Where did the Pumpkins grow?
To bear the name “Styrian Pumpkin Seed Oil” legally, the pumpkins must grow in one of these Austrian political districts:

- District of Korneuburg-Stockerau (limited to judicial District of Stockerau)
#3: Where and how does the Roasting and Pressing happen?
Only oil mills in the districts mentioned above are allowed to press Styrian Pumpkin Seed Oil. They have a long tradition of producing the Pumpkin Oil.
The press masters there got lots of experience. They know exactly all the process steps, the perfect timing and the roasting temperature which are essential for high quality Pumpkin Seed Oils. Just as you know it from your favourite coffee.
#4: Traditional processing
Processing the Pumpkin Seeds must happen in the traditional way. Means what?
Means washing the seeds. Means drying them. Means heating them gentle and slowly to bring out the tastes. Means graining the seeds. And roasting. And pressing with a certain pressure. And of course, no refining.
