100 g flour
1 egg yolk
125 ml milk
Whipped egg white from 1 egg
1 pinch of salt
Tomato sauce

Instructions

Whisk the flour, egg yolk, milk, and a pinch of salt into a smooth batter, then gently fold in the stiffly beaten egg white.
Remove the green base from the blossoms, wash them in cold water, and pat them dry. Dip them in the batter, then fry in moderately hot fat until golden brown.
Serve as a side dish on a bed of tomato sauce.
